Tugas dan tanggung jawab
  • Discuss product brief with internal R&D functions as well as marketing to align about SWOT of the concept, and define win win solution for the best option/ solution
  • Execute product development with recipe development and prototyping in lab scale by making sure overall ingredients are meet regulation and align with process and packaging development to get complete product design
  • Validate product development in industrial scale, starting with clear protocol trial (change brief, sampling plan and success criteria),
  • Preparing all related material tools and other resources align with operation team, execute and review result
  • Conduct shelf life study to make sure product quality still in acceptance range on determined condition
  • Align with finance to calculate cost calculation and to meet expected gross profit
  • Brainstorm with operation and also supplier for potential cost and quality improvements as well as defining new USP that can contribute on sales increase / prolong product life cycle
  • Execute product development with recipe development and prototyping in lab scale by making sure overall ingredients are meet regulation and align with process and packaging development to get complete product design
  • Validate product development in industrial scale, starting with clear protocol trial (change brief, sampling plan and success criteria), preparing all related material tools and other resources align with operation team, execute and review result
  • Conduct shelf life study to make sure product quality still in acceptance range on determined condition
  • Align with finance to calculate cost calculation and to meet expected gross profit
  • Prepare documentation : technical feasibility, recipe, COGS, protocol trial, trial report, shelf life report
  • Day to day activities in lab based on good laboratory practice (hygiene, safety, Halal, traceability, 5S)
Kompetensi
  • Experienced in a Food manufacture, bakery, cake, cooking ingredient industry for knowledge, sensory analysis, and market insight
  • Expertise in NPD Stage and Gate to drive result
  • Experienced at leading a project related to bakery development and has a good problem solving skill
  • Willing to be placed at Sentul and business travelling in various areas
